Pectin is a natural carbohydrate that occurs as a cell wall constituent in land based plants. An important characteristic is that it produces gel under suitable conditions. The food industry has taken advantage of this and today this natural stabiliser is used in the production of many foods such as:
Jams, jellies, milk desserts, jellybeans, heat-resistant fruit preparations, yoghurt bases, cake icings, milk mix drinks, health food.
